Something Sweet, Something Healthy and A Smoothie - Recipes

I am not doing brilliantly at revising at the moment, but here's a post for you all!

Something Healthy:

I could literally have this for breakfast everyday of my life.

Cinnamon and Banana Porridge:

Ingredients: (1 serving)
  • 30-40g porridge oats
  • 1/2 tsp ground cinnamon (add more/less depending on how cinnamon-y you want it!
  • 1 tbsp demerara sugar 
  • 120ml almond milk
  • 1 banana (sliced)
  • Berries (to top)
  • Yoghurt (to top)
To Make:
  1. Mix together oats, cinnamon, sugar milk and half a banana in a saucepan.
  2. Bring to boil, stirring occasionally.
  3. Lower the heat and cook for 4-5 minutes, stirring constantly.
  4. Remove from heat and serve.
  5. Add remaining banana, any berries, a spoonful of yoghurt and a sprinkle of cinnamon (if you're feeling especially cinnamon-y).
Delicious and so, so quick!

Something Sweet:

Not-So-Red Velvet Cupcakes:


  • 60g unsalted butter
  • 150g caster sugar
  • 1 egg
  • 10g cocoa powder
  • 20ml red food colouring (liquid or paste)
  • 1/2tsp vanilla extract
  • 120ml buttermilk (I made mine by mixing milk and fresh lemon juice together and leaving for 10-15 minutes)
  • 150g plain flour
  • Pinch of salt
  • 1/2tsp bicarbonate of soda
  • 1tsp white whine vinegar
  • 300g icing sugar
  • 50g unsalted butter
  • 125g cream cheese
To Make: (cupcakes)
  1. Preheat oven to 170c.
  2. Mix together butter and sugar until light and fluffy.
  3. Add egg and beat.
  4. In a separate bowl, mix together cocoa powder, food colouring and vanilla extract to make a thick paste. (I used too much cocoa powder, hence why my cakes were not particularly red).
  5. Add to butter mixture and mix.
  6. Pour in some of the buttermilk.
  7. Add in some of the flour.
  8. Repeat steps 6 and 7 until all buttermilk and flour has been added.
  9. Add salt, bicarbonate of soda and vinegar. Mix.
  10. Spoon mixture into cupcake cases (1/2-2/3 full).
  11. Bake for 15-20 minutes (depending on your oven, as always, make sure to check using a skewer, when cooked it should come out clean.
  12. Leave to cool.
To Make: (icing)
  1. Mix icing sugar and butter.
  2. Add cream cheese and mix.
  3. Do not overbeat as mixture can become very runny, (mine was quite runny but I left it on the cakes overnight and it hardened).
  4. Ice cakes when cold.
  5. Eat.
So nice, but I suppose these may not be everyone's cup of tea.

A Smoothie:

Very Berry Smoothie:

  • 240ml almond milk
  • Handful/couple of handfuls of spinach
  • Handful of strawberries 
  • Handful of raspberries
  • Handful of blueberries
  • Half a banana
(In any of my smoothie recipes you can use fresh or frozen fruit). Looooove this smoothie.
